Raw Carrot and Onion Bread

I have been delving into raw foods since i purchased my dehydrator recently and this is an amazing bread that i found online at The Raw Warung. It is so simple and easy and really delicious, i am coming up with new variety's every time i make it and will update the variety's section at the bottom of the page when i think i have more winners!!

Raw Carrot and Onion Bread

Ingredients:

2 Large carrots
2 large onions
1 cup of flax meal
1 cup of water
2 tablespoons of water
1 teaspoon of salt

Method:

Mix water and flax meal together and set aside to soak.
Grate onions and carrots add to flax meal mixture.
Add salt and oil and mix with hands.
Spread fairly thinly onto teflex sheets and put into dehydrator.
Dehydrate on 105dg f or 41dg c for 2 hours, flip over onto mesh sheets and dehydrate for a further 4 to 6 hours or until you have your desired consistency.
Top with your favourite toppings and enjoy!!!

Raw carrot, onion, beetroot bread
Store in airtight tupperware containers (if it lasts that long)!! 

Variety's I have come up with so far!

2 large carrots
1 1/2 large onions            grate all of these and add to flax meal...method same as above
1/2 large beetroot

Chilli Jam

Chilli Jam






1  1/2 Kilo of a combination of your choice, taste and desire........chillies (the bulk of the 1  1/2 K), roughy chopped, remove seeds for less heat; onion, garlic, coriander, ginger (grated), galangal (grated)...any combination are fine, if you don't have galangal just omit it, as with any other ingredients u wish to omit ( except chillies!)
 
1 1/2 Kilo Sugar
 
Jam Setta (Pectin in a sachet!) cheating u may think but sooooo  easy u wouldn't not use it!!
 
1/3 C water
 
In a large jam pan put ingredients and water and simmer until soft.
 
Heat sugar and Jam setta in oven for 6 mins, add to Ingredients in the Pan and stir constantly while the sugar melts. When melted bring to the boil stirring constantly, boil vigourisly for 9 mins, checking the Jam for setting after 6 mins and then again at 9 mins. re boil for 3 more minutes until reached your desired setting.
 
To check Jam is set, take pot of boil and leave for a few minutes, take a teaspoon full and drag across a frozen cold pack/lid, if it sets you are done.
 
Leave Jam to cool in pan for 10 mins, heat Jars ready for Jam ( a teaspoon thrown in the jar with some boiling water is easy)
 
Dry Jars throughly, fill with jam, leave to cool. Add lids when cool.

Sprouting time!!!!!

EASY SPROUTING TIPS

Sprouts are a summer favourite for me, they compliment all my salad plants that i have growing in the garden and they are cheap to buy and easy to grow.
There are all sorts of sprouting devices for sale around, but i simply use a large jar that has a lid. I punch holes in the lid so i can drain the sprouts twice daily.
My favourite sprouts to sprout are mung beans and fenugreek but you can sprout just about anything using this method.

Cover the bottom of your jar with the dried sprouts and depending on your jar size,up about one or two finger widths. (The bigger the jar the more you can grow, don't put too many dried sprouts in to start with...they expand so much!!)

Soak over night

Simply rinse every morning and night under water and put upside down to drain. ( I drain mine in the dish drying rack and then put back on the window sill when fully drained, they like a bit of light to grow properly)

In a few days your sprouts will start to sprout.

Watch them growing and eat when fully sprouted. (Usually around 5 to 7 days)

Refrigerate after sprouted, put  into an air tight container and  then go start the process again!!!

Chilli Tomato Sauce

Today i harvested a heap of chillies, both Bell and Fresno variety's, also my spring onions were getting so large that they really needed to be harvested as well........

I usually make Jam with my chillies but with all the spring onions i had to use i put my brain into action and made up a bit of a chilli tomato sauce recipe.....mine turned out damn hot because i had a heap of chillies in the mix, but still very yummy.
It can be added to pastas, used as a spread in wraps or eaten with falafel. If you are a chilli lover as i am you might want to just use it without adding it to anything.

CHILLI  TOMATO SAUCE 

Chillies, remove the stalks
Spring onions, roughly chopped
Canned tomatoes
Dash of salt

Blend all ingredients together in a blender, transfer from blender into jars or containers, refrigerate.

 Any amounts of the above can be used, use more chillies for a spicier sauce and more tomato for a less spicy one. Fresh tomatoes could also be added if you have excess. You could also add fresh garlic as much as you like, to your  own taste as well.

Potato salad vegan style

I recently got given a heap of potatoes from my neighbour this combined with my overload of spring onions,garlic chives, red capsicums, cherry tomatoes and rocket in my garden at the moment lead me to the perfect baked potato salad dish, so yummy i have to share with you!

4 - 5 potatoes
1 onion
3 - 4 cloves of garlic
Put ingredients into a roasting tray, chop the onion in half, don't peel the garlic,  chop potatoes into bite size pieces. Dribble a little olive oil over vegetables and roast until soft.

Dressing:
apple cider vinegar - dash, more or less to taste
olive oil - aprox 1/3 of a cup (more if mixture too thick)
garlic chives, small bunch
spring onions, 1 or to taste
roast onion
roast garlic
dash of salt
parsley, handful
chives, small bunch

Blend all ingredients together with a hand blender.

When potatoes are roasted and have cooled, add 1 red capsicum finely chopped, garlic chives finely chopped, spring onions finely chopped, add dressing and stir through well.

Place dressed salad in a serving bowl.
I then semi squashed the potato salad into the middle of the bowl and put rocket and cherry tomatoes around the outside, drizzle a little dressing on the rocket and serve.
Alternatively you could toss the rocket and cherry tomatoes through the potato and then serve.

Pineapples

I have always wondered how pineapples grew."Just plant the tops and in a few years you will grow another" someone once told me, so i began planting every pineapple top i could and sure enough, true to word, a few have started producing babies!
They need sun, water and a little food and a bit of time and true to what i thought was rumour they do produce!
The pineapple starts forming in the middle of the plant when the plant reaches a good size, slowly, slowly it will start to form and looks just like a pineapple only super mini!
It has a beautiful purple flower that appears with each developing spike on the skin, as the flower dies the spike develops and hardens.
The pineapple will slowly then grow bigger and bigger until it till it is ready for harvest.
Don't forget to plant the top of your newly grown pineapple so the cycle continues!!

Artichokes in flower

Normally i am so onto my artichokes as soon as they are ready and they never get to the flowering stage. I was however away for Christmas this year and it was just at the time my artichokes were starting to bud, this one snuck past the crew who were looking after my garden .....what a beautiful surprise to see one actually  in flower, they are amazing!!
